We know that it's very important to keep our blade sharp, but are you using the right tools? A number of chefs pointed out that knife steels and whet stones or sharpening stones are not the same thing, but the differences between them are poorly understood.

This helpful chef explains it perfectly: "A whet stone actually removes steel from the knife, grinding a new edge. If you have a dull knife, this is the only thing that's going to make the knife sharp again. A steel is used to fix an existing edge. As you use the knife, some of the metal at the very edge folds over. The steel can fold it back out straight, so that you can continue to use the existing edge and don't have to cut a new one with a stone."
