Foie gras

One of the most celebrated delicacies of French cuisine (and one of the most controversial in American cuisine) is foie gras, or duck/goose liver.  Controversial production methods (force-feeding ducks to increase their fat content) have made its  a constant source of debate in the US cooking industry, but in France, 92% of the population continues to consume it, according to a French news report. It's prized for its rich, creamy flavor and versatility (can be made into a mousse, lightly pan-fried or served cold as a terrine, etc.), and when bird flu epidemics hit France, the price rises significantly. Today, you can probably get one kilo for around $60 per kilo, depending on the producer whether duck or goose fat is used.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
