Elvers are tiny little beasts, but they come at a mighty cost: just last year they sold for $1,300 a pound in the US. So why does such a slimy, slithery delicacy cost so much? It's been that way ever since the monstrous tsunami that hit Japan in 2011 and took out tons of its eel farms. The demand has been on the rise ever since, and in Europe, elvers populations are becoming endangered. Don't expect to see these on local restaurant menus, however. You're more likely to come across a dish with them in a European Michelin-star restaurant.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
