Pizzeria Lola - Minneapolis, Minnesota

How about some kimchi on your pizza? Before you knock it, you have to try the Lady Zaza at Pizzeria Lola in Minneapolis. Any skepticism you had about Italian-Korean fusion foods will be quickly squashed after one bite. While it's definitely one of the more modern and recent spots on this list (it opened in 2010), it's run by Ann Kim, a Korean immigrant who trained with famed pizzaiolo Tony Gemignani and who's been killing it ever since, serving up some of the best thin-crust, wood-fired pizza in the Midwest. This year, Kim was nominated for a James Beard award, and her establishment and is still a favorite spot of Minnesota native and celebrity chef Andrew Zimmern.

We are definitely making these Easy Cheesy Mini Pizzas for our next party!

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
