Big Lou's Pizza - San Antonio, Texas

No, your eyes aren't deceiving you. This pizza is monstrous, and it totally validates what they say about everything being bigger in Texas. At Big Lou's Pizza in San Antonio, you can order a 42-inch, 30-pound pizza with the toppings of your choice. The restaurant was featured on the Travel Channel's Man v. Food for its behemoth pies and has become a local institution in its past 18 years of operation. You have to eat in if ordering the big one, but they do carryout for pizzas that are 37" and less. If that's not enough, you can even pre-order a 62-incher (must be demanded well in advance) to gobble down with your hungriest friends or family.

We are definitely making these Easy Cheesy Mini Pizzas for our next party!

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
