It's not everyday you see food trucks morphing into refined, eclectic eateries. After all, street foods aren't meant to be high-class gastronomic feats—they're meant to be creative, belly-filling, on-the-go eats. In 2012, when Misery Loves Co. was operating out of an old Winnebago named "Big Red," the theme was just that: gut-busting gourmet sandwiches. At its current brick-and-mortar address in Winooski, Vermont, you can still find a handful of sandwiches, but the rest of the menu consists of innovative "snacks," such as these cheddar beignets, plus small plates, handmade pastas, dinner plates and the legendary fried chicken served family-style.
