Even during his food truck days, the owner of Opal Thai was known for customizing people's orders and tailoring his flavorful menu to their tastes. At his stand-alone restaurant in Honolulu's Chinatown neighborhood, he sticks to this tradition, popping up at everyone's table to ask what kind of Thai food they've eaten before, what their spice tolerance is and if they have any food allergies. Then they're served dishes that check all the boxes, left to marvel at the fresh, authentic fare they didn't know they'd been craving.
