Avoid Lumpy Gravy

To avoid lumpy gravy when adding flour or cornstarch to thicken, try making a paste before adding them to the pan. You can mix them with a bit of water (1/2 cup water for every 4 tablespoons thickener), then whisk into the pan. Stir well, while gradually add stock or the liquid of your choice until the consistency is to your liking.
