9 Leftover Foods You're Reheating Wrong

Whether your leftover veggies were originally steamed, roasted, grilled or stir-fried, don't assume your microwave will restore them all to their former glory. The best way to preserve the texture and flavor of leftover vegetables depends on the initial cooking method. If your veggies were steamed, they're already going to have a more delicate, soft texture. To keep them from becoming all limp and soggy, try reheating them in a 200-250°F oven, covered until the last few minutes. Roasted veggies should have a slightly firmer, crunchy texture, so you can stick them back in the oven at a higher heat like 450°F for up to five minutes. Leave enough space between them, though, and don't hesitate to season them again with olive oil and spices. Grilled or stir-fried veggies can be gently reheated on the stove over low to medium heat with a bit of oil. This will take about five minutes as well.

Method

  1. Boil the red and green spaghetti separately in salted water until al dente.
  2. Fry the shrimp in a pan with plenty of salt, pepper and paprika.
  3. Add 1/2 cup of cream cheese, and stir through until combined.
  4. Arrange the cooked spaghetti in an alternating pattern on a plate.
  5. Top with the creamy shrimp sauce
  6. Garnish, and serve!
