Cut the Meat Properly

Many fancy steakhouses serve the meat neatly sliced, and to do this at home, you're going to need a very sharp knife. This will allow you to cut through the meat like butter and end up with neat, clean slices for a great presentation. If necessary, you can buy a knife sharpener to use at home (or get them sharpened professionally, if you prefer). When slicing the meat, also remember to cut across the grain (your knife should be perpendicular to the meat fibers). This will leave you with tender slides that are easier to chew. Of course, this is totally optional, and you can opt to leave the steak whole for serving, if desired.
