To make this risotto, simply moisten Arborio rice with white wine, then cook slowly, adding a ladleful of stock at a time until it is fully absorbed and the rice is cooked through. Then, right before serving, add the leftover Parmesan and some cooked peas, bacon or even truffles. Bon appétit!
