Shopska salad - Bulgaria

Shopska salad is a delicious Bulgarian specialty that's popular throughout Southeastern Europe. The ingredient colors—white, green and red—are meant to reflect the colors of the Bulgarian flag. With tomatoes, cucumbers, onions, peppers and a crumbly brined Balkan cheese known as sirene, it's the perfect companion to summer picnics.

Serves 4 as a side

  • 6 tomatoes,  chopped
  • 1 cucumber, quartered and sliced
  • 1 small red onion, halved and thinly sliced
  • 1 red bell pepper, deseeded, cored and chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup feta or goat cheese (if you can't find sirene)

Instructions

  1. Combine all the vegetables in a large bowl. Drizzle with the olive oil and red wine vinegar. Season with salt to taste. Toss well to combine.
  2. Let the salad chill in the fridge for at least 2 hours, to let the flavors combine. Just before serving top with the chopped parsley and crumbled feta or goat cheese.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
