Shellfish

For some, bad shellfish can literally be a death sentence. It's important to be very careful when checking for freshness with these guys, as you can get terribly ill if they're no longer good to eat. For smaller shellfish, such as clams, oysters and mussels, open shells should be discarded, as it means their contents are dead. After cooking, any unopened shells should also be thrown out. Other signs of spoilage include a strong fishy odor, discoloration or dryness.
