Use a pressure cooker, with caution

Cooking temperatures are higher under pressure, but an Instant Pot or a traditional pressure cooker are one of the most practical ways to quickly cook tough cuts of meat (it cuts the cooking time in half). Keep in mind that raised temperatures will destroy the collagen quicker, which could result in dried out meat. This can be avoided by letting the meat sit in its juices for 1/2 a day or 1 full day in the fridge, which will help prevent any risk of dryness. Try preparing the dish ahead of time and cooking it the next day. And even when you're using a pressure cooker, you need to sear the meat before activating the pressure.

These tasty stuffed cabbage rolls are so easy! 

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
