The Best World Sauces: How Many Have You Tried?

Tzatziki - Greece

You're probably already familiar with this cool and refreshing dip that's popular in Greece but also in other Southeastern Europe and Middle Eastern cuisines. Commonly served as a mezze (cold appetizer), it's made with strained yogurt, cucumbers, garlic, fresh herbs, lemon juice (or vinegar), olive oil and salt. Its cool, creamy texture makes it an ideal accompaniment to grilled meats and fish, fried appetizers, or even as a dip for chips, pita bread and raw veggies.

Ingredients:

  • 1 large cucumber
  • 1 cup (280g) Greek yogurt
  • 1 garlic clove, pressed
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • Handful of fresh mint leaves, finely chopped
  • Salt and freshly cracked black pepper to taste

Instructions:

  1. Peel and grate the cucumber, then transfer it to a strainer and salt it, to drain the liquid.
  2. In a mixing bowl, add the Greek yogurt, garlic, olive oil, vinegar and mint leaves. Season with salt and freshly cracked black pepper to taste.
  3. Squeeze the grated cucumber of its remaining liquid, and add it to the other ingredients.
  4. Mix well to combine, and adjust seasoning if necessary. Serve chilled.
