Nuoc Cham Pha - Vietnam
Nuoc cham is actually a generic name for various Vietnamese dipping sauces, but it's widely associated with a simple recipe for mixed fish sauce. Don't be deterred by its pungent and not-so-appetizing smell—it's excellent with fried or fresh spring rolls, all kinds of Asian appetizers and bo bun, a refreshing rice vermicelli salad dish that uses nuoc cham pha as a dressing. Typically made with fish sauce, lime juice, sugar and water, it's also common to add seasonings like minced garlic and finely chopped bird's eye chilies for extra flavor.
Ingredients:
- 6 tbsp water
- 2 tbsp sugar
- 1.5 tbsp lime juice
- 2 tbsp fish sauce
- 1 garlic clove, peeled and minced
- 1 bird's eye chili, finely sliced
Instructions:
- In a mixing bowl, whisk together the water and sugar until dissolved. Add the remaining ingredients. Stir well to combine.
- Serve at room temperature.
