Kimchi Ramen Stew

This is one of the most popular Korean stews, and for good reason! Made with super ripe kimchi, scallions, onions, tofu and often other veggies, it's seasoned with spicy gochujang and simmered until all the flavors meld. While it's more commonly served with rice on the side, this recipe adds ramen noodles directly to the stew, making it a convenient one-pot meal.
