- 1 sweet onion, chopped
- 1 lg hot pepper
- 1 tbsp garlic, minced
- 3 celery, diced
- 1 tsp seasoning salt
- 1 tsp spicy pepper blend seasoning
- 1 tsp thyme
- 1 lg can tomatoes, crushed with juices
- 1 cup vegetable broth
- 2 tbsp creole hot sauce
- 2 pkg vegan chick'n strips
- 1 pkg vegan chorizo, chopped
- 2 cups rice, cooked

Crab & Clam Gumbo / Stew

A great meal for cold days
- Olive oil pam spray
- 2 cups of chopped onion
- 2 Tbsp garlic/heaping
- 2 cups diced tomatoes, rinsed & drained
- 2 cups water
- 2 Tbsp basil
- pepper
- 2 - 6.5oz chopped clams in juice
- 2 cups chopped celery
- 1 cup milk
- 14 oz crab-meat, rinse well

Authentic, rich, and hearty gumbo
- 1 Whole uncooked chicken
- 2 lbs of andouille sausage
- 2 lbs of shrimp , peeled
- 1 lb oysters, fresh or frozen
- 2 lbs of fresh okra
- 1/2 large red onion
- 1/2 cup green onion
- 1/2 cup celery, diced or chopped
- 1 green bell pepper, diced or chopped
- 4 garlic cloves
- 1/2 cup shallots
- 2 1/2 cups flour
- 2 1/2 cups vegetable oil
- 1 cup butter, divided
- 1 gallon water
- salt, to taste
- pepper, to taste
- tarragon, to taste
- thyme, ground or dried leaves, to taste

- creole seasoning, to taste
- gumbo file, to taste
- paprika, to taste

- 3 lbs chicken pieces
- 1/4 cup vegetable oil
- 3 cup diced cooked ham
- 2 cloves garlic, minced
- 3 large onions, chopped
- 3 cans (1 lb ea) stewed tomatoes
- 1 lb deveined raw shrimp
- 1 large bay leaf
- 3 cup celery
- 1/4 cup chopped parsley
- 2 cup uncooked regular rice
- 2 tsp salt
- 1/4 tsp tabasco sauce

- 3 Large skinless chicken breasts cut in halves
- 1/4 C. Vegetable oil
- 1 Lb. Smoked sausage cut in 1/4 inch' slices

- 5 Tbs. butter
- 2 Onions
- 12 Cloves garlic mashed & minced
- 2 Bell peppers
- 3 Celery stalks cut like bell peppers
- 1/4 C. Worcester sauce
- 1/4 Bunch parley chopped
- 4 C. hot water
- 6 Beef bullion cubes
- 2-14 Oz. cans stewed tomatoes

This is a vegan version of a gumbo one of my friends in Florida used to make
- 3 vegan mexican sausages, sliced
- 3 vegan smoked apple sage sausages, sliced
- 1 pkg vegan chorizo, sliced
- 1/2 cup vegan margarine, soft
- 1/4 cup nutritional yeast
- 1/4 cup flour
- 1 sweet onion, diced
- 1 tbsp garlic, minced
- 1 green pepper, diced
- 1 red pepper, diced
- 2 celery sticks, diced
- 3 tomatoes, diced
- 1 pkg frozen okra, sliced
- 1 tsp thyme
- 1 tsp cayenne pepper
- 1/2 tbsp cumin
- 2 tsp coriander
- 1 lg can tomatoes, diced and juice
- 4 cups vegetable stock
- Celery salt, to taste
- 1 tsp white pepper
- 1/4 cup creole hot sauce
- Cooked rice, to serve
Liver Creole

Fry bacon Remove from pan and drain grease
- 4 slices of bacon
- 16 oz can of tomatoes
- 1/3 tsp green pepper
- 1/8 tsp cayenne red pepper
- 3 t flour
- 1 lb liver
- 1/2 tsp chilli powder

- 2 garlic cloves minced
- 2 large onions chopped
- 1/4 cp chopped celery leaves
- 2 tbsp butter
- 2 pounds peeled crawfish tails ( reserve fat)
- 1 tbsp Worcestershire sauce
- 2 dashes of Crystal hot sauce
- 1/2 lemon juiced
- Tony Zatarans Creole seasoning, to taste
- 1/4 cp chopped parsley
- 2 cups cooked rice
