VIDEO: Sweet Potato Toast

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!

These are gluten-free (uses almond meal instead of flour), and are chock-full of healthy fats (almonds & flax)

  • 1/3 cup almond meal/flour
  • 2/3 cup flax seed
  • 1 scoop vanilla protein powder
  • pinches of baking powder and salt
  • 3/4 cup egg substitute
  • 1/2 cup canned pumpkin

This is a great Fall comfort food recipe that you can make in your crock-pot

  • 1 can (425g) pumpkin puree (NOT pumpkin pie mix)
  • 1 extra large can (794g) crushed tomatoes (no salt added if available)​
  • ​2 tsp minced garlic
  • 1 tsp ground cumin​
  • 1 tsp pumpkin pie spice​
  • 1 tbsp ground red pepper​
  • 1 tbsp chili powder​
  • 1/4 tsp sea salt​
  • ​1 bag (340g) frozen shelled edamame
  • ​1 medium yellow onion (about 340g)
  • 1 medium green bell pepper (about 126g)​
  • 1 medium zucchini (about 190g)​
  • 1-1/4c white mushrooms (about 170g)​
  • 1 can (425g) reduced sodium black beans​
  • *optional* topping of fat-free shredded mozzarella or Greek yogurt​

  • 3 tbsp of Bob’s Red Mill Flaxseed Meal
  • 12-14 drops liquid stevia (or other sweetener – I used the NuNaturals Vanilla)
  • 2 tbsp Libby's canned pumpkin puree
  • dash of cinnamon
  • dash of nutmeg
  • 1 tbsp Hershey’s Special Dark Cocoa
  • 1 tsp baking powder
  • 1 tbsp melted peanut butter (for topping)
  • 1 small banana, sliced (or fruit of choice for topping)
  • Dash of cinnamon on top

This pumpkin pie is so tasty you won't even miss the crust

  • Filling:
  • 1 15 oz can of pumpkin
  • ½ cup of sugar (or sweeten with a little Splenda to taste)
  • 3 large eggs
  • 3 tablespoons of honey
  • 2 teaspoons of cinnamon
  • ½ teaspoon of ground ginger
  • ¼ teaspoons of cloves
  • ½ teaspoon of allspice
