No Mayo Broccoli Salad

By curnoj
Blanch broccoli florets by adding them to boiling salted water for 2-3 minutes
- 1 head broccoli, florets, chopped (about 4 cups florets)
- 1 cup halved cherry tomatoes
- ½ cup sliced celery
- ½ cup sliced red onion
- ¼ cup raisins
- ¼ cup toasted sunflower seeds
- Optional: ½ cup cooked crumbled turkey bacon
- Honey Yogurt Dressing
- 1 tsp salt
- ½ tbsp garlic powder
- 1 tbsp olive oil
- ¼ cup honey
- 2 tbsp apple cider vinegar
- ½ cup plain Greek nonfat yogurt
- Pepper to taste
Thai Chicken Noodle Soup

In a soup pot, heat the oil over medium-high heat
- 1 tbsp sesame oil
- 4 cloves garlic, minced
- 2 tsp minced ginger
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup natural chunky peanut butter
- 1 cup crushed tomatoes
- 6 cups reduced-sodium chicken broth
- 1 tbsp fish sauce
- 6 ounces rice noodles
- 2 cups shredded green cabbage
- 1 cup canned bean sprouts, drained
- 1/4 cup chopped scallions
- Chopped cilantro (optional)
- Chopped peanuts (optional)
Cauliflower Cheddar Soup

In a large saucepan, combine the cauliflower, onion, broth and bouillon
- 1 medium head cauliflower, broken in florets
- 1 medium onion, chopped
- 1 can (14-1/2 ounces) chicken broth
- 1 Knorr chicken stock concentrate
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 3 cups milk
- 2 cups (8 ounces) shredded cheddar cheese
- 1 tbsp dried parsley flakes
- 1 tsp salt
- 1/4 tsp ground nutmeg
- 1/8 tsp each cayenne pepper, curry powder and white pepper
Apple Crisp Pizza

Preheat oven to 350*
- Pastry for single-crust pie (9 inches)
- 2/3 cup sugar
- 3 tbsp all-purpose flour
- 1 tsp ground Cinnamon
- 4 medium apples (like Gala, Fiji, Braeburn, Empire) peeled and diced into 1/4 inch pieces
- TOPPING:
- 1/2 cup all-purpose flour
- 1/3 cup packed brown sugar
- 1/2 cup old-fashioned rolled oats
- 1 tsp ground cinnamon
- 1/4 cup salted butter, softened
- DRIZZLE:
- 1/2 cup caramel topping
Hash Brown Casserole

Preheat oven to 350*
- 2 lbs hash browns, frozen
- ¼ cup butter, melted
- 1 tsp salt
- ¼ tsp pepper
- ¼ cup onion, chopped
- 2 cups sour cream
- 1 (10¾ ounce) can cream of mushroom soup
- 2 cups cheddar cheese, shredded
- 2 cups corn flakes, crushed
- ¼ cup butter, melted
Sweet and Sour Chicken

Heat 1 tbsp oil in a large deep-bottomed skillet over medium-high heat
- For the Stir Fry:
- 2 tbsp olive oil, divided
- 1 lb boneless skinless chicken breasts (about 2 breasts), cut into 1-inch pieces
- 1 large white onion, chopped into 1-inch pieces
- 1 green bell pepper, chopped into 1-inch pieces
- 1 red bell pepper, chopped into 1-inch pieces
- 2 cups fresh pinapple chunks
- 2 carrots, peeled and chopped into coins
- 2 cloves garlic, minced
- Sesame seeds (if desired)
- White or brown rice, for serving
- For the Sauce:
- 1/4 cup ketchup
- 3 tbsp sriracha chile sauce
- 3 tbsp rice wine vinegar
- 3 tbsp brown sugar
- 1/2 tsp oyster sauce (optional)
- 1 pinch white pepper
- 1/2 cup pineapple juice (or orange juice, or any kind of citrus juice)
- 1 tbsp cornstarch
Beef Stew

Prepare meat by cutting it into chunks and making sure that it's dry so it browns well
- 2 lbs beef stew meat
- 4oz tomato paste
- 2 tbs butter
- 1 tbs olive oil
- Worcestershire sauce
- 1 pkg stevia
- 1 medium sized onion diced
- 2 cloves garlic minced
- 4 medium carrots diced
- 2 medium potatoes cut into chunks
- 1/4 cup frozen peas
- 5 cups low-sodium beef broth (or sub in 1 cup of red wine for broth and use this to deglaze pan before adding broth)
- Salt & Pepper to season
- Could also season with favourite spices e.g.chili powder for kick, cinnamon for complexity.
Mind Blowing Baked Chicken

Preheat oven to 350*
- 2 tsp Cornstarch
- Coconut Oil
- 3 Garlic Cloves; minced
- 1 tbsp Grated Fresh Ginger
- 3 Scallions; sliced - whites & greens separated
- 1/4 cup Low-Sodium Soy Sauce
- 1/2 cup Honey
- 2 Limes; juiced
- 1 tbsp Sesame Oil
- 2 tbsp Chili Flakes
- 2 boneless skinless chicken breasts, sliced for healthier option..or you could use 2 pounds of chicken wings
Vegetable Lo Mein

In a small bowl, with a wire whisk, mix the sauce ingredients and set aside
- 1 lb Chinese egg noodles, or whole wheat spaghetti
- 2 tbsp olive oil
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 green pepper, chopped
- 1 large onion, chopped
- 2 tbsp fresh ginger, chopped
- 2-3 green onions, chopped
- 1 tsp chili flakesl, optional
- Sauce
- 1/4 cup honey
- 2 tbsp tomato paste
- 1 cup vegetable stock
- Cornstarch
- 2 tbsp sesame oil
- 1/3 cup soy sauce
- 1/4 cup rice wine vinegar
No Crust Asparagus Quiche

Preheat oven to 350*
- 2 tsp olive oil
- ½ cup vertically sliced onion
- 2 garlic clove, minced
- 1 pound asparagus, trimmed and cut in pieces (can use canned if not in season and add to muffin tins without sauteing)
- Cooking spray
- 1¼ cups milk
- 1 cup shredded Gruyere cheese
- 3 tbsp chopped fresh parsley
- 2 tsp Dijon mustard
- ½ tsp sea salt
- ¼ tsp pepper
- 5 large eggs, lightly beaten
