Grandpa's Pickled Beets

Great recipe for canning!
- 4 cups sugar
- 2 cups water
- 2 cups vinegar
- Fresh beets, washed well, peeled and cut into slices/cubes
- Fresh dill weed, cleaned well.
- 1 tbsp canning spice for each jar
Cake: Lemon Poppy Seed

Heat oven to 350F. Grease and flour a 10" tube pan
- 3 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups sugar
- 4 eggs
- 1/ tsp vanilla
- 1 cup vegetable oil
- 13oz evaporated milk
- 1/4 cup poppy seeds
- Grated rind from 1 lemon
- Yellow food colouring
- 2-3 tbsp icing sugar
- 1 tbsp hot lemon juice
Cookie: Whipped Shortbread

Heat oven to 350F. Line cookie sheet with parchment or silicone lining
- 1 cup butter
- 1-1/2 cups flour
- 1/2 cup icing sugar
- Maraschino cherries
Christmas Treat: Homemade Irish Cream

Combine all ingredients in blender and blend on high for 30 seconds
- 1 cup table cream
- 14oz sweetened condensed milk
- 1-2/3 cup Irish Whiskey
- 1 tsp instant coffee
- 2 tbsp chocolate syrup
- 1 tsp vanilla
- 1 tsp almond extract (optional)
Homemade Waffles

- 2 cups white flour
- 1 tsp salt
- 4 tsp baking powder
- 2 tbsp sugar
- 2 eggs
- 1-1/2 cups warm milk
- 1/3 cup melted butter
- 1 tsp vanilla
- oil/cooking spray for waffle iron
Waffles: Buttermilk

Classic buttermilk waffles
- 2 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups low-fat buttermilk
- 1/2 cup melted butter
- 2 large eggs
- 1 tbsp vanilla
- oil/pam for spraying waffle iron
Christmas Treat: Cherry Snowballs

Maraschino cherries dipped in chocolate and rolled in coconut!
- - 24 Maraschino Cherries
- - 1 box semi-sweet baking chocolate
- - 1 can sweetened condensed milk
- - 1 bag unsweetened coconut
- * Note that you can substitute cherries for ju-jubes (we use red and green at Christmas). They end up tasting like the chocolate covered jellies in Bridge Mixture ~ Very yummy!
Chocolate Marshmallow Log

- - 1 bag mini marshmallows
- - 1 box semi-sweet baking chocolate
- - 1 can sweetened condensed milk
- - 1 bag unsweetened coconut
- - Waxed paper
Freezer Shortbread

Yummy shortbread slices with crispy coloured sugar around the rims!
- - 2 cups butter
- - 1 cup white sugar
- - 2 tsp vanilla extract
- - 4 cups flour
- - coloured decorating sugars: we use red, green and white at Christmas
- - waxed paper
Chocolate Peanut Butter Balls

Crispy peanut butter balls dipped in chocolate!
- - 1 box baking chocolate
- - 1 small jar of crunchy peanut butter
- - 2 cups Rice Krispies
- - 1 cup icing sugar
- - waxed paper
- - Sprinkles if desired
- - My grandma uses about 1 tbsp of wax (the kind that you would use to seal canning jars) in the chocolate. It does make a difference to how shiny and pretty the balls are after. The wax is such a small amount it has never hurt us... but it would be up to you if you want to use it.
