Southwestern Spicy Hot Chorizo Sausage

This came about because I got tired of the inferrior chorizos on the market
- 10 chipotle peppers in adobo sauce
- 1 cup coarse chopped red onion
- 1/2 cup minced habanero or other hot pepper
- 10 cloves garlic
- 1/2 cup red wine vinegar
- 1/2 cup gold tequila
- 10 pounds well-marbled pork butt meat
- 4 tablespoons ground cumin
- 6 tablespoons coarse kosher or sea salt
- 10 tablespoons ancho chili powder
- 4 tablespoons pequin chili powder or cayenne pepper
- 6 tablespoons granulated or powdered onion
- 6 tablespoons granulated or powdered garlic
- 6 tablespoons Spanish sweet paprika
- 3 tablespoons Mexican oregano
- 2 tablespoons fresh ground white pepper
- 4 ounces of pork casings
Basic Baked Ham

Oven baked ham
- Store bought half of ham 2-4 lbs. Sprite, 7 up, or any clear soda.
Pork chop sauce

Mix everything but pork chops in small pot and bring to a boil, reduce and simmer for 1/2 hour
- 6-9 pork chops
- 1 onion chopped
- 2 tbsp brown sugar
- 2 tsp vinegar
- 1/4 cup lemon juice
- 3/4 cup catchup
- 2 tbsp Worcestershire sauce
- 1 cup water
- Salt and pepper
Pork Stew

Put pork roast, onion, potatoes, water or stock, salt and pepper in large pot
- 2 to 3 cups leftover pork roast diced
- 1 large onion diced
- 6 potatoes peeled and diced
- 1 can mixed vegetables
- salt and pepper to taste
- 3 tbsp. corn starch or enough to thicken
- 3 cups water or chicken stock (I use water)
Baked Barbecue Ribs

Brown ribs in skillet. Place meaty side up in broiler pan
- 4lb pork ribs
- 1 large bottle of barbecue sauce
- 1 large onion
- 1 1/2 cup water
- Pinch of salt and pepper

Cook chops in frying pan - searing on medium high for 2 minutes a side, then leaving with a foil tent for 6 minutes

Spice Rubbed Pork Chops

In a small bowl mix together all dry ingredients until completely mixed
- 2 Butterfly Cut Pork Chops (any pork chop will do)
- For rub:
- 2 tbsp Paprika
- 1 tbsp Chili Powder
- Pinch of Scoty Flakes or cayenne pepper (optional)
- 2 tsp Garlic Powder
- 1 tsp Seasoning Salt
- 1 tsp Ground Mustard
- 1 tsp Fresh Ground Black Pepper
- A little bit of Oregano, Parsley, Thyme.

- 1 TABLESPOON DIJON MUSTARD
- 1/2 TEASPOON VANILLA
