Sweet Apple Cinnamon Rolls
1 apple
Pie crust dough
1/8 cup brown sugar
1/8 cup almond powder
1/2 tsp cinnamon
Egg yellow(s)
Milk
1. Halve an apple and slice each half finely.
2. Cut the top of a pie crust to get a straight edge.
3. Spread the brown sugar and almond powder all over the dough.
4. To get the first row, line up the apples in a straight line and cut out the section. Continue until all the dough is all used up.
5. Mix egg yellow and milk and cover each roll with the mixture.
6. If you wish, sprinkle a little extra brown sugar on top of each roll.
7. Bake in the oven for 18 min at 350° F.

Warm Armenian Veggie Dish

This is a great dish and super healthy and tasty, a rich, warm and comforting dish, similar to a stew or a hot pot
- 3 tbsp olive oil
- 1 large onion roughly chopped
- 3 cloves garlic minced
- 1 inch fresh ginger minced (or 1 tsp ground)
- 1-2 tbsp grounded cinnamon
- 1 tsp cumin
- salt
- 2-3 tsp harissa paste (or dried harissa)
- 2 cups canned chopped tomatoes
- 1 lemon, juice and zesta handful fresh cilantro
- 1 small pumpkin peeled and cut into 2-inch pieces
- 1 sweet potato peeled and cut into 2-inch pieces
- 3 carrots peeled and cut into 2-inch pieces
- 1 zucchini cut into 2-inch pieces
- 10 dried apricots
- 1/2 cup chickpeas/garbanzo beans pre boiled
- a handful raisins

I am a huge fan of Mexican food! I am usually way to lazy to make enchiladas so I have evolved my recipe to a layer...
- Corn tortillas
- Enchilada sauce:
- 1 can enchilada sauce
- chicken stock
- cilantro (about 1/2 a cup)
- cayenne pepper
- salt
- Filling:
- 1lb ground beef or ground turkey
- 1 small can green chilis (or rotel, whatever I have on hand)
- 1/2 a white onion
- Taco seasoning (I just use a mixture of cayenne, chili powder, paprika, cumin and salt)
- Vegetables:
- Baby Bellas
- Zucchini (or whatever vegetable you prefer corn, spinach, bell peppers)
- Black olives
- Green onion
- Sharp Cheddar
- Homemade salsa

This is a hearty mexican vegetarian chili
- 2 pkg vegan chick'n strips
- 3 cans white kidney beans
- 1 sweet onion, chopped
- 1/2 red onion, chopped
- 4 jalapenos, diced
- 2 banana peppers
- 4 poblano peppers

- 2 poblano peppers
- 2 red jalapeno peppers
- 1 habanero pepper
- 3 tablespoon nut or other oil
- 1 cup chopped yellow or red onion

- 1-1 inch diced red bell pepper
- 1-1 inch diced yellow bell pepper
- 1-1 inch diced green bell pepper
- 3-1 inch diced Anaheim chili peppers
- 1 pound 1 inch diced portobello mushrooms
