To make a tomato-pesto tart, simply roll out some puff pastry and spread 2 heaped tablespoons of pesto on top. Carefully arrange thin slices of tomatoes on top, then season with salt, pepper and extra virgin olive oil. Sprinkle some grated cheese on top, and bake at 350F for 35 minutes or until the dough is golden brown.
