Fish - China
Fish is considered to be an extremely lucky symbol for Chinese New Year (which occurs more toward the end of January or early-mid February). Typically, it's served whole and steamed, with all the parts and bones intact—a gesture which is believed to signify abundance. However, tradition states that there should be some leftover for the next day, so the prosperity brought by this "surplus" of fish is extended even further.
