It's all about the mole at this LA Oaxacan restaurant that serves a daily breakfast menu until 2 pm, in addition to lunch and dinner. The family-owned and operated Guelaguetza has been honored with the James Beard award for its outstanding cuisine, including an award-winning black mole sauce, its crispy tlayudas (Mexican pizzas) and traditional, hearty Oaxacan entrees. The food is served in a beautiful setting with live music from Wednesday to Sunday (6-9 pm). It's certainly not the cheapest option in town, but the food quality and ambiance more than make up for it.

Get this: Festival de moles for sharing—includes 4 individual servings of mole negro, mole rojo, coloradito and estofado, alongside shredded chicken, rice and a large handmade tortilla. If you're feeling adventurous, try the sauteed grasshoppers appetizer to start.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
