This local Wilmington favorite opened in 2000 and has a cult following among locals and visitors alike. Boasting a huge menu of creative and unusual burrito fillings, it might not be your everyday traditional Mexican eatery, but you won't be disappointed. Try any of the funky options, like Wok on the Beach, a burrito stuffed with wok-style veggies, Teriyaki sauce, plus rice, beans, cheese and your choice of grilled filling. "Hot, Fat, Cheap & Easy" is a fitting slogan, indeed!
Get this: When in season, try the "Churkeychanga", a fried burrito stuffed with roasted turkey breast, garlic mashed redskin potatoes and homemade cornbread stuffing, smothered in jalapeno cream gravy and served with cranberry salsa on the side.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
