Mi Tierra Café Y Panadería - San Antonio, TX

The iconic Mi Tierra Café Y Panadería in San Antonio is no longer open 24/7, but you'll still find the same well-rounded menu of classic Tex-Mex faves, a full-on Mexican ambiance with mariachis and colorful, festive decorations, plus an excellent selection of traditional sweets at the adjoining bakery (panadería). Sure, it's kitschy and touristy (it's located in the famous Market Square downtown), but that's all part of its charm. Given that the restaurant has been open since 1941 and still draws large crowds, you can fully expect the fun, "over-the-top" experience that makes it one of the town's most famous landmarks.

Get this: Enchiladas verdes de pollo (chicken enchiladas in green tomatillo sauce) with monterrey jack cheese and sour cream, served with guacamole, Spanish rice and refried beans.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
