For authentic, Baja-style fish tacos, you can't go wrong with Taco Nazo in LA. The venture began as a lunch truck in 1978, founded by owners Maria and Gilberto Romero. It only took three years for them to open their first restaurant, a casual counter-serve eatery with a menu of super fresh seafood options inspired by the Ensenada region of Mexico. In addition to their amazing fish and shrimp tacos, they also have al pastor, asada and chicken options and delicious ceviche, which comes generously served in a cup. Long lines are to be expected, but you can also opt to order online and get your food to go.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
