Bulgaria - Banitsa

In Bulgaria, you can start the day off with this classic savory pastry, served with yogurt, ayran (a salted yogurt drink) or boza (a malt drink). It's made with eggs, natural yogurt, sirene (white brined cheese) and flaky filo dough. Consumed hot or cold, it also comes in other varieties throughout the country, including with spinach or pumpkin or in a sweet version with milk. Banitsa is a major part of Bulgarian cuisine, and it's traditionally served every Christmas and New Year, with charms baked into the dough for good fortune and health.
