Although we tend to call all sandwiches made in a panini press "paninis" in the US, the original Italian panini isn't so universal. The authentic version is made with Italian bread (not sliced sandwich bread) and is often filled with simpler combinations of meats, cheeses and veggies. Follow the lead of this recipe, which layers it with mortadella, artichoke hearts, lettuce and a store-bought pesto.
