Although you can find crispy falafel throughout the Middle East, it's an especially prized food in Israel and widely considered to be the country's national dish. Composed of a deep-fried ball made with ground chickpeas, spices and fresh herbs, it makes for an irresistible vegetarian snack or sandwich filling. For the latter, it either comes stuffed in fluffy pitas or wrapped in flatbread with tahini-based sauces, pickled veggies, salads and spicy condiments. In other words, it's the ultimate street food, and falafel stands are ubiquitous in Israel.
