Ceviche - Peru

This well-known raw fish dish is popular all throughout Latin America and the Caribbean, but it originated in Peru. Peruvians are especially loco for it, having created a holiday in its honor. The most common preparation consists of raw chunks of corvina or cebo (sea bass) fish, marinated in freshly squeezed bitter orange or key lime juice, with sliced raw red onions, chili peppers, cilantro, salt and pepper. It's typically served at room temperature with corn and sliced sweet potato on the side, though there are many variations of the traditional recipe to try.

Where to eat: In Lima's bohemian Barranco neighborhood, you'll find a line of locals queueing outside Canta Rana with cold beers in hand. Though you might have to wait some 20-30 min. for your table, you won't be disappointed by the huge selection of super fresh ceviche options on the menu.
