Rougail Saucisse - Réunion

This fragrant, comforting stew from the French island of La Réunion is made with fresh or smoked Creole pork sausages or chicken that are cut into pieces and cooked with diced tomatoes, onions, garlic, chili peppers (for those who like their food with a kick) and a handful of spices including ginger and turmeric. Traditionally served with rice and red beans on the side, it's a hearty and well-balanced dish that is also very easy to prepare.

Where to eat: After a hike in Cap Noir on Reunion Island, replenish your stores at Le Ben Ile, where you'll find some of the best traditional Creole food and an excellent rougail saucisse.
