Borscht - Ukraine

Borscht is a velvety beetroot soup, typical of Ukraine but also popular throughout Eastern Europe and Northern Asia. Other ingredients may include cabbage, carrots, potatoes, cucumber, onion and tomato, which are cooked separately from the beetroot. Sometimes meat or cabbage is added. The stock is made with beef or pork meat and/or bones that are boiled anywhere from two to six hours or longer. Served hot or cold, this sweet and sour soup is known for its signature red color—which it gets from the beets—and is often served with sour cream, fresh dill and hard-boiled eggs.
