Sarma

Sarma are stuffed vine leaves found throughout the Eastern Mediterranean. Sarma can also be prepared with chard, cabbage, or mallow leaves. The filling consists of rice and minced meat. If you're trying out recipe below, you should be able to find the Turkish rice and vine leaves in a Middle Eastern supermarket, or online.

Good to know: Sarma are sometimes mistakenly called 'dolma', however dolma means stuffed vegetables in Turkish.

Ingredients:

  • 1 1/2 cups Turkish rice
  • 7 oz. minced meat (beef works well)
  • 1/2 tin of strained tomatoes
    1 large onion
  • 1/2 bunch parsley
  • 5 tbsp olive oil
  • Juice of 1/2 lemon
  • A pinch of salt and pepper
  • Vine leaves
  • Dried mint (optional)

Instructions:

  1. Mix all ingredients for the filling together in a bowl.
  2. Lay vine leaves flat on a work surface and place 2 tablespoons of filling in the center of each. Fold the opposite sides over the filling, and then fold the bottom side over before rolling up the filling completely.
  3. Place the vine leaves in a saucepan, and add the olive oil. Add water until the leaves are covered. Simmer on low-heat for 30 mins.
  4. Let cool completely before serving.

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
