Can Food Be Refrozen?

As a kid, pretty much everyone was told not to put the ice cream back in the freezer after it had been say out. Why? Because "it'll make you sick!". And that's in fact true.

If ice cream melts at room temperature or warmer, bacteria such as Listeria can grow - yuck. Outbreaks of this nasty can occur in your freezer when the melted ice cream, freezes again.

However, once certain other foods have been thawed, it is possible to refreeze them - although the texture and taste will suffer.

For example, food that has been thawed in the refrigerator can be refrozen, even if it is raw (in the case of meats, for example). If you thaw ground beef to prepare a Bolognese sauce, you can freeze the sauce afterwards.

But remember, it's unwise to refreeze foods that have been left out of the refrigerator for more than 2 hours. This period is reduced to 1 hour if the room temperature is 30 ºC or more.
