Pumpkin Bread

If you're thinking about throwing a Halloween party, this pumpkin cake is a must! Sprinkle with pumpkin seeds for some added crunch. 

Ingredients (for 8 slices):

  • 1 1/2 cups flour
  • 1 1/4 cups sugar 
  • 1 cup plain pumpkin purée 
  • 1/2 cup butter
  • 1/2 cup milk 
  • 2 eggs
  • 1 tsbp cinnamon
  • 1 tsp vanilla extract 
  • 1/2 tsp baking powder 
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • Salt

Instructions:

  1. Preheat oven to 350°F and butter a loaf tin.
  2. Add the flour, salt, spices, baking powder, and baking soda to a bowl and set aside.
  3. In a seperate bowl, add the butter and sugar. Using an immersion blender, mix well until it is incorporated.
  4. Stir in the pumpkin and the vanilla, before adding the dry ingredient in the other bowl. Mix by hand until everything is properly incorporated.
  5. In the microwave, warm up the milk for 20 seconds. Add to the batter and mix well.
  6. Pour the batter into the loaf pan and bake for 50 min.
  7. Allow to cook for 15 min. 
  8. Enjoy!

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
