Braised Cabbage with Apple

Braised cabbage with apple is a vitamin-rich, delicious side dishthat's perfect for the fall period. Enjoy with a Sunday roast or Thanksgiving dinner accompaniment. Sweet and tender, it's everything you need during the chillier months.

Ingredients ( for 6 servings):

  • 1 red cabbage (cut into thin strips)
  • 2 tbsp canola oil
  • 1 onion (sliced)
  • 2 apples (sliced)
  • 1/3 cup balsamic vinegar
  • 1/4 tsp ground allspice
  • Salt and pepper

Instructions:

  1. Sit the cabbage in cold water. Meanwhile, heat a glug of oil in a large pan and add the onion.
  2. Cook for 3 min. stirring until just tender. 
  3. Add 2 tbsp of balsamic vinegar and cook for an extra 3 min., stirring until the mixture turns a little golden. 
  4. Add the apple and stir for an exta 3 min. 
  5. Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice. 
  6. Add another 2 tbsp balsamic vinegar, and salt to taste. Toss everything together, cover the pot, and cook over low-heat for one hour, stirring from time to time.
  7. Season with salt and pepper, and if desired, drizzle over another tbsp of balsamic vinegar.

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
