Prunes Wrapped in Bacon

Apparently a fave with Martha Stewart, these prunes wrapped in bacon — also known as Devils on Horseback — are a snack you need in your life. The perfect balance between salty and sweet, these bites are melt in your mouth deliciousness.

Why not try them at your next fall gathering?

Ingredients (for 8 bites):

  • 4 bacon rashers
  • 8 pitted prunes
  • Cocktail sticks

Instructions:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
  2. Fill a bowl with warm water, and soak the toothpicks in it for 15 min. 
  3. Halve the dates lengthwise. Place a small amount of cheese inside each date. Wrap a piece of bacon around and secure with a toothpick. 
  4. Place on baking sheet and cook for 25 min.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
