Pumpkin Chocolate Cake

This chocolate cake with pumpkin is perfect for the cold season thanks to a mix of delicious spices that really add flavor, and bring out the rich and velvety taste of chocolate.

Ingredients:

  • 3/4 cup + 2 tbsp butter
  • 2 cups brown sugar 
  • 3 eggs
  • 1 cup + 1/4 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/4 tsp ginger powder
  • 8 tbsp milk
  • 2 cups pumpkin purée (Hokkaido pumpkin works best!)

Ingredients:

  1. Preheat oven to 350°F and grease a baking tray. 
  2. In a bowl, beat butter and sugar until fluffy and stir in eggs one at a time until well combined.
  3. In a seperate bowl, mix dry ingredients. Add the milk to the egg mixture and mix until a homogeneous mixture is formed.
  4. Stir in the pumpkin purée and pour the batter into the baking tray. Smooth out the mixture and bake for 45 mins.

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
