Over- or under-mixing the dough

How you handle the dough can seriously impact the final texture of your cookies. Not mixing the dough well enough may lead to clumps of dry ingredients appearing in the baked cookies, in addition to a non-uniform texture. On the other hand, overworking the dough can result in tough, flat cookies. To strike the perfect balance, stop mixing once it's clear that all of the ingredients are well combined: the dough should look sticky and messy rather than perfectly smooth, and there should be no visible dry streaks of flour.
