Not chilling the dough

While chilling the dough is often listed as an "optional" step in recipes, you really shouldn't skip it! Chilling the dough has several benefits, especially if you plan far enough in advance to give it a full 24 hours in the fridge. First, it gives the dough ingredients time to meld and their flavors to develop. Second, baking the cookies from a cold temperature allows them to take on that coveted crisp outer layer and moist, chewy interior.
