Use a colander

A lot of people tend to use a fine mesh strainer when the time comes to drain the pasta.

But you should ideally be using a colander. Using a strainer means you get rid of all of the pasta water, that crucial element that takes pasta from good to great. A colander allows you to retain a little bit of the starchy pasta water, which you can then add directly to your sauce. Let simmer for 1 minute after adding it to the sauce, so that the pasta has time to mix with the sauce. That's how real Italian chefs do it!
