Creamy, fresh, and just a little salty. Brunch recipes don’t get much more satisfying than a crunchy bruschetta with decadent toppings. This recipe is light enough to be an appetizer, yet sweet enough to serve as a healthy dessert.
Ingredients (for 6 pieces):
6 small slices of whole wheat bread
1 cup cottage cheese
1-2 ripe pears, thinly sliced
1/2 cup chopped walnuts
Honey, for drizzling
Fresh mint leaves, for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C).
Place the sliced whole wheat bread on a baking sheet in a single layer.
Toast the bread slices for about 5-7 min. or until lightly golden and crisp. Keep an eye on them to prevent burning.
Thinly slice the ripe pears. If desired, you can sprinkle the pear slices with a little lemon juice to prevent browning.
Once the bread slices are toasted, remove them from the oven and let them cool slightly.
Spread a generous layer of cottage cheese onto each toasted bread slice.
Arrange a few slices of fresh pear on top of the cottage cheese layer.
Sprinkle chopped walnuts over the pear slices.
Drizzle honey over each bruschetta, to taste.
If desired, garnish each bruschetta with fresh mint leaves for a pop of color and flavor.
Arrange the prepared bruschetta on a serving platter and serve immediately. Enjoy!
