Homemade Chicken and Waffles
Chicken and waffles are the epitome of comfort food, and what better way to celebrate Mom than with an indulgent Southern dish? The chicken tenders and quartered waffle pieces in this recipe make it perfect for sharing, but we won’t blame you if you want the whole thing!
Ingredients (for about 4-6 portions):
For the chicken:
- 1 lb (about 450g) chicken tenders
- 1 cup buttermilk
- 1 tsp hot sauce (optional)
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying
For the waffles:
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup unsalted butter, melted
- Vegetable oil or non-stick cooking spray, for greasing the waffle iron
For serving:
- Maple syrup
- Honey
- Hot sauce (optional)
Instructions:
- In a bowl, mix together the buttermilk and hot sauce (if desired). Add the chicken tenders to the bowl, ensuring they are fully coated in the buttermilk mixture. Cover and refrigerate for at least 30 min. or up to 4 hours.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then stir in the milk and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat your waffle iron instructions.
- In a shallow dish, mix together the flour, garlic powder, paprika, salt, and black pepper.
- Remove the chicken tenders from the buttermilk marinade, allowing any excess to drip off.
- Coat each chicken tender in the seasoned flour mixture, shaking off any excess.
- In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the chicken tenders in batches and cook until golden brown and cooked through, about 4-5 min. per side. Transfer the cooked tenders to a plate lined with paper towels to drain any excess oil.
- Lightly grease the preheated waffle iron with vegetable oil or non-stick cooking spray.
- Pour the appropriate amount of waffle batter onto the waffle iron according to its size and cook according to the manufacturer's instructions until golden brown and crisp.
- Once cooked, transfer the waffles to a wire rack to cool slightly, then cut them into quarters for easy sharing.
- Arrange the chicken tenders and waffle pieces on a serving platter.
- Serve warm with maple syrup, honey, or hot sauce. Enjoy!
