Greek Yogurt Parfaits with Homemade Granola

Single-serve yogurt parfaits are a simple and healthy brunch item that deserves a spot on any Mother’s Day menu. Your homemade granola can be stored for up to two weeks, but there’s no guarantee it will last that long! Stick to our classic recipe or personalize it with Mom’s favorite flavors.

Ingredients (for 6 parfaits):

For the granola:

  • 3 cups old-fashioned oats
  • 1 cup chopped nuts (such as almonds, pecans, or walnuts)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

For the parfaits:

  • 3 cups vanilla Greek yogurt
  • Homemade granola
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries

Instructions:

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the old-fashioned oats, chopped nuts, shredded coconut, ground cinnamon, and salt. Stir until well mixed.
  3. In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil or vegetable oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until the oats and nuts are evenly coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet.
  6. Bake for 30-35 min., stirring halfway through, or until the granola is golden brown and toasted.
  7. Remove the granola from the oven and let it cool completely on the baking sheet.
  8. Next, assemble the parfaits. Start by spooning a layer of Greek yogurt into the bottom of each serving glass or jar.
  9. Next, add a layer of homemade granola on top of the yogurt, followed by a layer of fresh raspberries and blueberries.
  10. Repeat the layers: Greek yogurt, granola, and fresh berries.
  11. Finish each parfait with a final layer of berries on top.
  12. Serve the yogurt parfaits immediately, or cover and refrigerate them until ready to serve, and enjoy!
