Cong You Bing, or scallion pancakes, are a savory and crispy flatbread infused with the fresh flavor of scallions. These pancakes hail from street food stalls in China. They're made from a simple dough, layered with finely chopped scallions and pan-fried to golden perfection. Crunchy on the outside yet perfectly chewy on the inside, they couldn't be easier to make!
Ingredients (for 6-8 pancakes):
2 cups all-purpose flour
3/4 cup hot water
1/4 cup cold water
1/2 tsp salt
1/4 cup vegetable oil (plus some for cooking)
1 cup finely chopped scallions (green parts only)
Extra flour for dusting
Instructions:
In a large mixing bowl, combine the flour and salt.
Gradually add the hot water while stirring with a wooden spoon or chopsticks until the mixture becomes crumbly.
Add the cold water and continue to stir until a rough dough forms.
Transfer the dough to a lightly floured surface and knead for about 5 min. or until smooth and elastic.
Cover the dough with a damp cloth and let it rest for at least 30 min.
In a small bowl, mix the vegetable oil with the finely chopped scallions. Set aside.
Divide the dough into 6-8 equal pieces.
Roll each piece into a ball and then flatten it into a small disk.
On a lightly floured surface, roll out each disk into a thin circle (about 8 inches in diameter) and brush a thin layer of scallion oil over the dough circle.
Roll the dough into a log, then coil it into a spiral shape.
Flatten the spiral with your hand and roll it out again into a thin pancake (about 1/4 inch thick).
Heat a tbsp of oil in a non-stick skillet over medium-high heat.
Place a pancake in the skillet and cook for 2-3 min. on each side, or until golden brown and crispy.
Repeat with the remaining pancakes, adding more oil to the skillet as needed.
Cut the pancakes into wedges and serve hot with soy sauce or your favorite sauce. Enjoy!
