Ingredients (for 6 pretzels):
1 and 1/2 cups warm water (110°F/45°C)
2 and 1/4 tsp active dry or instant yeast (1 packet)
1 tsp salt
1 tbsp granulated sugar
4 cups all-purpose flour (plus more for work surface)
2/3 cup baking soda
10 cups water
1 egg, beaten (optional for egg wash)
Coarse sea salt (for topping)
Instructions:
In a large mixing bowl, combine warm water and yeast. Let it sit for 1 min. until it becomes frothy. Add salt and sugar, stirring until dissolved.
Gradually add flour, mixing with a wooden spoon until the dough is thick and no longer sticky. If necessary, add more flour until the dough is soft and pliable.
Knead the dough on a lightly floured surface for 3-5 min. until smooth and elastic.
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 10 min.
Preheat your oven to 450°F (230°C) and line two baking sheets with parchment paper.
Turn the dough onto a lightly floured surface and divide it into 8 equal pieces.
Roll each piece into a 20-inch rope. Form each rope into a U-shape, then cross the ends over each other and press them onto the bottom of the U to form the pretzel shape.
In a large pot, bring 10 cups of water and the baking soda to a boil.
Using a slotted spoon, lower each pretzel into the boiling water for 20-30 seconds. Remove and place them on the prepared baking sheets.
Brush each pretzel with the beaten egg if desired and sprinkle with coarse sea salt.
Bake for 12-15 min. or until pretzels are golden brown.
