Ingredients (for 12 tortillas):

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup vegetable oil
  • 1 cup warm water

Instructions:

  1. In a large bowl, combine the flour, salt, and baking powder. Mix well.
  2. Add the vegetable oil and warm water to the dry ingredients. Mix until a dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for about 5 min. until smooth and elastic.
  4. Divide the dough into 12 equal pieces and shape each piece into a ball. Cover with a clean kitchen towel and let rest for at least 15 min.
  5. On a lightly floured surface, roll each ball into a thin, round tortilla, about 8 inches in diameter.
  6. Heat a large skillet or griddle over medium-high heat. Cook each tortilla for about 1 min. on each side, until bubbles form and the tortillas are lightly browned.
  7. Stack the cooked tortillas on a plate and cover with a kitchen towel to keep warm. Serve immediately or store in an airtight container.
